Skillet Cornbread with Homemade Butter and Local Honey by Jacob Hunter

Cornbread Ingredients

1 1/3 cups organic yellow cornmeal
1 1/3 cups organic all-purpose flour
4 tbsp. raw sugar
2 tsp. baking powder
¼ tsp. baking soda
2 tsp. kosher salt
9 tbsp. local butter
2 large eggs
2 tbsp. VA honey, plus extra for serving
¾ whole milk
¾ cup sour cream
2 ears local corn, kernels removed from the cob (about 2 cups)

Butter Ingredients

1 cup heavy whipping cream
½ tsp. kosher salt

Method of Preparation for Cornbread

Preheat an oven to 400 degrees F.  Place the cornmeal, flour, 3 tbsp. sugar, baking powder, baking soda, and salt in a mixing bowl and whisk till all ingredients are combined and there are no lumps.

Place 1 tbsp. of butter in a small pot or pan and melt.  Place the corn kernels in the pan.  Add 1 tbsp. sugar and cook till corn is bright yellow and soft.  Remove from heat and allow to cool.

Place 6 tbsp. of the butter in an 8-inch cast iron skillet over medium heat.  Cook till slightly browned, about 5 minutes.  Remove from heat.  Whisk the eggs and honey in a bowl, then whisk in the milk, sour cream and browned butter.  Add this liquid mixture to the flour mix.  Add the cooked corn.  Combine everything with a spoon or whisk till all ingredients are incorporated.

Heat the last 2 tbsp. of butter in the same 8-inch cast iron skillet you used before and heat till butter starts to foam.  Remove from the heat and add the cornbread mix till it is ¼” from the top of the skillet.  Place the pan in the oven and bake until you can put a knife or toothpick in the cornbread and it comes out clean.  This should take about 20-30 minutes.  Allow to cool for 10 minutes before slicing.

Method of preparation for Homemade Butter

Place the heavy cream and salt in a stand mixer (or you can mix by hand with a whisk).  Start the mixer on medium speed and then increase to full.  Whip the cream till it starts to become firm.  You will start to see some liquid come out of the butter as it starts to firm up.  Mix for 5 minutes or until cream is not liquid anymore nor is it the consistency of whipped cream.  Drain the liquid from the finished butter and place the butter in a dish for serving.

To serve

Place one slice of warm cornbread on a plate.  Place a dollop of butter on top of cornbread and drizzle honey over the entire plate.
